Ingredients
- Nonstick cooking spray 1 pound ground pork
- 2 carrots, peeled and diced
- 2 celery ribs, peeled and diced
- ¼ cup chopped onion
- ½ cup soy sauce
- 3 tablespoons hoisin sauce
- Juice of 1 lime
- 1 teaspoon minced ginger
- 1 teaspoon granulated garlic
- ½ teaspoon red pepper flakes
- 1 head iceberg lettuce
- ¼ cup chopped cashews
- ¼ cup chopped green onions
Preparation
1. Spray a 12-inch skillet with nonstick cooking spray. Cook the ground pork in the skillet, stirring frequently, until browned. Add the carrots, celery, and onions, and cook an additional 5 minutes.
2. Combine the pork mixture in a slow cooker with the soy sauce, hoisin sauce, lime juice, garlic, ginger, and pepper flakes. Cover and cook on LOW for 2 hours, or until the mixture is fragrant and the vegetables are tender.
3. Carefully wash the lettuce and peel away the leaves, keeping them intact. Spoon ¼ cup of the pork filling into the lettuce leaves. Top with the cashews and green onions, and fold the lettuce to form a wrap.
