Masi Recipe (Sticky Rice Peanut Filling) of Liloan, CEBU
Ingredients:
- 3/4 kilo of plain rice
- 1/4 kilo glutinous rice
- 1/4 kilo flour
- 1 scoop of peanuts
- 1 scoop of brown sugar
- cup of coconut milk
Methods:
- Boil the water then after that mix the plain rice the glutinous rice and the flour and leave for 30 minutes until the mixture will become sticky
- Then let it cool. And then cook the peanuts until they become tender and pound them with some pestle, mixed with the brown sugar while doing so at the mortar. And sift them so that it will separate the chunks one because it is not ideal to use. Cut the dough into small size ball.
- And the cup of coconut milk now, brush some of it towards the dough and place it in your hand and scoop a teaspoon of peanuts and fill it in to the dough. And close the dough gently using your other hand and put it in a nice dish and serve. This is only good to be consumed for one day because of the coconut milk that spoil so easily, and it is not good also to put in the refrigerator because it tends to hardened the dough and the filling. Make 50 pieces.
how many cups of water to boil. what are you going to do with the rest of the coconut milk. You said brush some of it to the dough. Is it plain rice flour?
