Pinoy Ube Bar Bread

Ingredients
For bread;
  • 4 cups bread flour
  • 1 packet instant yeast
  • 3/4 cup evaporated milk
  • 1/4 cup melted butter
  • 2/3 cup warm water
  • 1/2 cup sugar
  • 1 tbsp ube flavouring
For syrup;
  • 1 tablespoon ube flavoring
  • 1/2 cup purple yam powder
  • 2 cups powdered sugar
  • 1 1/2 cups water
For coating;
  • dessicated coconut
Cooking Procedure
  1. Preheat oven to 350°F
  2. Combine flour, quick-rise instant yeast and sugar into a mixing bowl.
  3. Mix until completely combined.
  4. Add milk and ube flavouring mixed in warm water and melted butter.
  5. Keep mixing until the flour absorbs the liquid.
  6. Knead the dough with hands until it becomes smooth.
  7. Place the dough in a non-stick or greased baking pan.
  8. Stretch evenly using hands or rolling pin.
  9. Trim all the sides of the dough and score, forming rectangular bars.
  10. Bake in the centre of the oven for about 25 minutes or until done.
For the purple yam syrup
  1. Soak the purple yam powder in a sauce pan with water until rehydrated.
  2. Heat in medium-high heat, then add the purple yam flavouring.
  3. Stir and bring to a boil then add the powdered sugar.
  4. Stir and simmer until thicken, set aside and let it cool.
  5. Cut the bars and soak into the syrup.
  6. Lift while shaking it gently, letting the excess drain back into the bowl.
  7. Roll into the dessicated coconut.
Notes
  • If using a different kind of yeast, always follow the package instructions.
  • If using mashed purple yam as a replacement, use the same measurement.
  • Do not over-knead the dough.
  • Drain the excess syrup before rolling into the shredded coconut.
