Hardinera Recipe

HARDINERA is a one of the famous dishes we have here in Lucban. It’s made up of diced meat, red bell pepper and hard boiled eggs, it’s almost the same ingredients as my Embotido recipe. The preparation is a bit tedious and the ingredients is costly that’s why it’s usually served only during special occasion and fiestas.

Hardinera Recipe

Ingredients:
  • 2 Tbsp. canola cooking oil 
  • 1 medium sized onion, diced 
  • 3 cloves garlic, minced 
  • 1 lb. pork, diced 
  • 1 cup water 
  • 1/2 cup tomato sauce 
  • 1/4 cup sweet pickle relish 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon ground black pepper 
  • 1/2 beef cube 
  • 1/2 cup pineapple chunks 
  • 1/4 cup roasted red bell pepper 
  • 1/4 cup liver spread 
  • 1/4 cup cheese, grated 
  • 1/2 cup bread crumbs 
  • 2 pieces hard boiled eggs, sliced or wedged 
  • 2 pieces raw eggs


Procedure:
  1. Add canola oil in a cooking pot and sauté onions and garlic. 
  2. Put it the diced pork and cook for 5 minutes. 
  3. Add the beef cube, water, and tomato sauce then bring to a boil. 
  4. Simmer until the pork is tender and the liquid completely evaporates. Set aside and let cool. 
  5. In a large mixing bowl, combine the cooked pork, salt, ground black pepper, bread crumbs, liver spread, sweet pickle relish, pineapple chunks, raisins, and cheese. 
  6. Mix all the ingredients until everything. 
  7. Grease a llanera and arrange the sliced eggs and roasted sweet pepper. If you don’t have a llanera you can use loaf pans. 
  8. Pour close to half of the beaten egg mixture and ensure that the eggs are well distributed on the llanera. 
  9. Scoop the pork mixture in to the llanera until it occupies at least 3/4 of the total volume. 
  10. Cover the whole llanera with aluminum foil. Pour at least 6 cups of water in the steamer. 
  11. Put the llaneras in the steamer and steam for about an hour.
  • You can experiment, you may want to add, Vienna sausages in it, luncheon meat and Spanish chorizo. It’s more expensive, but it’s worth the try. And also try eating the Hardinera with your bread, put a little bit of mayonnaise, just like a Filipino version of hamburger, yum! Share and enjoy!
