Ube Pie traditional Filipino baked pastry style.This Pie is a small version of Buko pie, the filling is made up of Purple yam, coconut sport, milk and vanilla for flavoring. Easy and simple recipe that can be serve for merienda or snacks.
Pinoy Ube Pie Recipe
Ingredients- 1 pack grated purple yam
- 1 cup coconut sport
- 1/2 evaporated milk
- 1/2 cup condensed milk
- 1/2 cup melted butter
- 1 teaspoon vanilla
- 2 1/2 cup all purpose flour
- 1 cup lard or vegetable shortening
- 4 tablespoon sugar
- 1/2 teaspoon salt
- 4 tablespoon ice water
- 1 egg white

Cooking Instructions
- In a mixing bowl, combined grated purple yam, condensed milk, evaporated milk, melted butter and vanilla flavoring.
- Mix together until completely incorporated, set aside.
- Combine and mix flour, sugar and salt in a mixing bowl.
- Add shortening then mix until mixture resembles coarse crumbs.
- Stir in water, a tablespoon at a time.
- Mix the dough into a round disc shape, wrap in plastic and chill for 30 minutes.
- In a clean working table, place dough in wax paper then flatten using a rolling pin.
BAKING
- Cut out 2 sizes circle shape in a flat dough.
- Press the dough along the edges of the mould or muffin pan.
- Pour purple yam mixture into the mould line with dough.
- Bake in a preheated oven over 350°F, bake for 30-50 minutes or until golden brown.
