Pinoy Ube Bar Bread
IngredientsFor bread;
- 4 cups bread flour
- 1 packet instant yeast
- 3/4 cup evaporated milk
- 1/4 cup melted butter
- 2/3 cup warm water
- 1/2 cup sugar
- 1 tbsp ube flavouring
- 1 tablespoon ube flavoring
- 1/2 cup purple yam powder
- 2 cups powdered sugar
- 1 1/2 cups water
- dessicated coconut
- Preheat oven to 350°F
- Combine flour, quick-rise instant yeast and sugar into a mixing bowl.
- Mix until completely combined.
- Add milk and ube flavouring mixed in warm water and melted butter.
- Keep mixing until the flour absorbs the liquid.
- Knead the dough with hands until it becomes smooth.
- Place the dough in a non-stick or greased baking pan.
- Stretch evenly using hands or rolling pin.
- Trim all the sides of the dough and score, forming rectangular bars.
- Bake in the centre of the oven for about 25 minutes or until done.
- Soak the purple yam powder in a sauce pan with water until rehydrated.
- Heat in medium-high heat, then add the purple yam flavouring.
- Stir and bring to a boil then add the powdered sugar.
- Stir and simmer until thicken, set aside and let it cool.
- Cut the bars and soak into the syrup.
- Lift while shaking it gently, letting the excess drain back into the bowl.
- Roll into the dessicated coconut.
- If using a different kind of yeast, always follow the package instructions.
- If using mashed purple yam as a replacement, use the same measurement.
- Do not over-knead the dough.
- Drain the excess syrup before rolling into the shredded coconut.
