Pinoy Mazapan de Mani

Ingredients
  • 2 cups ground peanut
  • 3/4 cups white sugar
  • 6 egg yolks
  • 1/2 cups butter
  • Sweet pili nuts for toppings
Instructions
  1. In a food processor, grind the peanuts until finely ground.
  2. Combine the egg yolks, sugar, butter and ground peanuts.
  3. Place the mixture in a pan and cook in medium heat.
  4. Stir occasionally until the texture of the mixture becomes really thick.
  5. Scoop the mixture on a polvoron molder and arrange on a greased baking sheet.
  6. Top it with sweetened pili nuts and brush each piece with egg yolk.
  7. Place in an oven that's 375 °F preheated and bake until golden brown
Notes
  • While grinding peanuts, the sides of the bowl needs to be scraped occasionally. The peanuts will release their oil and a compact paste will be formed. The paste is ready when you press between your fingers and it stays compact.
  • Shape mazapan on your palm into cylindrical or heart shape and flatten into 1/2 inch polvoron shape. In this process the oil on the mixture helps to not to stick on your hands.
